Your lookup range needs locking before you fill it down, and typing four dollar signs into the middle of a formula by hand is fiddly enough that most people skip it — which is exactly how the range ends up sliding.
On a Mac, Cmd counts as Ctrl. Tab still moves focus, so you can always leave this field.
